How Tequila Is Made: From Agave Field to Bottle

Tequila is one of the most regulated spirits in the world, and its production is tied to a specific plant, a specific geography, and a specific process that has been in place for centuries. Understanding how it is made changes how you taste it. Every bottle is the result of at least seven years of agave growth, and then a carefully sequenced production process that the best producers approach with real precision.

The Short Answer

Step 1: Growing the Agave

Blue Weber agave (Agave tequilana var. azul) is the only agave species permitted for tequila production under Mexican law. This is not arbitrary — it was selected for its consistent sugar content, its adaptability across the tequila-producing regions of Jalisco and several neighboring states, and its historical role in the spirit's development.

The plant takes 7-12 years to reach full maturity, depending on altitude, soil type, and growing conditions. In the highland Los Altos region, where the red iron-rich soil and cooler temperatures slow the growing cycle, maturation often runs toward the longer end of that range. Faster-growing plants harvested early produce lower-sugar piñas that ferment incompletely and create harsh byproducts in the finished spirit.

Traditional producers wait for jimadores (agave harvesters) to read the plant's natural signs of maturity: the quiote (flowering spike) begins to emerge from the center of the plant, and the piña has reached full size and maximum sugar concentration. The quiote is typically cut before it blooms to keep the plant's energy in the piña rather than the flower — though allowing some plants to fully flower and be pollinated by bats is increasingly recognized as important for maintaining genetic health in the cultivated agave population.

Step 2: Harvesting

Jimadores harvest the agave by hand using a coa — a sharp-edged, circular blade mounted on a long wooden handle. They cut away the pencas (the thick, spiky leaves) from the base of the plant in a process that takes precision and physical endurance. Done correctly, a skilled jimador removes the leaves cleanly while leaving the maximum amount of piña intact.

The exposed piña can weigh anywhere from 30 to 150 kilograms depending on the variety and growing conditions. Highland piñas tend to be smaller but more flavorful than their lowland counterparts. The harvested piñas are typically cut into sections to fit into the cooking vessels and transported to the distillery, where production begins almost immediately to prevent fermentation of the raw agave sugars before cooking.

Step 3: Cooking

Raw agave piñas cannot be fermented directly — their primary carbohydrate is inulin, a long-chain fructose polymer that yeast cannot metabolize. Cooking breaks down the inulin into simpler fermentable sugars, primarily fructose. How a producer cooks the agave is one of the most consequential decisions in determining the finished spirit's character.

Brick ovens are the traditional method. These are masonry structures — either underground hornos or above-ground ovens — that slow-roast the agave at low heat for 24-72 hours using steam. The long, low-temperature cooking caramelizes some of the sugars, develops complex roasted agave flavors, and produces the rich, slightly sweet cooked agave character that defines traditional tequila. The best producers take pride in their brick oven use, and you can often smell the difference in the glass.

Autoclaves are industrial pressure cookers that use high-pressure steam to cook agave in 6-12 hours. They are significantly more efficient than brick ovens but produce a different — and most enthusiasts would say less nuanced — cooked character. The shorter, hotter cooking creates a sharper flavor profile with less of the deep roasted sweetness that comes from a slow oven.

Diffusers represent the industrial end of the spectrum. A diffuser extracts sugars from the raw agave with hot water and enzymes, bypassing cooking entirely. The agave never develops the characteristic cooked flavor, and the resulting liquid often lacks the depth associated with quality tequila. Diffuser production is common in high-volume brands and is considered by many enthusiasts and traditional producers to be a shortcut that compromises quality.

Step 4: Crushing

The cooked agave must be crushed to extract the fermentable juice, called aguamiel (honey water). Two main methods are in use, and they produce meaningfully different results.

The roller mill is the most common method today. The cooked agave is fed through a series of mechanical rollers that shred the plant and squeeze out the juice. The fiber and juice are separated, and typically only the juice is fermented. Roller mills are efficient, consistent, and capable of high throughput — which is why virtually every major distillery uses them.

The tahona is the traditional method: a massive circular stone wheel, typically volcanic rock weighing 1-2 metric tons, that rolls around a circular pit to crush the cooked agave. Unlike a roller mill, the tahona keeps fiber and juice mixed together, and both are often fermented together. This fiber-inclusive fermentation adds texture and complexity that roller-mill production cannot replicate. Step 5: Fermentation

The extracted juice — and in tahona production, the fiber along with it — is transferred to fermentation tanks where it is mixed with water and inoculated with yeast. The yeast consumes the sugars and produces alcohol and carbon dioxide. This process typically takes 2-7 days, and the choices a producer makes here significantly shape the finished spirit.

Yeast selection is a major variable. Commercial yeast strains produce reliable, consistent fermentation. Proprietary cultivated strains developed by individual distilleries over many years can produce distinctive character associated with that specific house. Wild airborne yeasts — allowed in by leaving fermentation tanks open to the environment — produce slower, more variable, and often more complex fermentations that contribute to what many describe as the "wild" or "rustic" character of traditional tequila.

Fermentation is where most of the flavor precursors in tequila are created. Higher alcohols, esters, and other congeners produced during fermentation form the chemical backbone of the spirit's flavor. Temperature control, tank material (stainless steel vs. open wooden tanks), and fermentation duration all affect what compounds are produced. Open wooden tanks allow natural yeast contact from the air and contribute their own microbial character to the process — a choice associated with traditional producers who want the most complex possible fermentation.

Step 6: Distillation

Tequila is legally required to be distilled at least twice. Most producers do exactly two distillations. A small number do three, though many traditionalists argue a third distillation over-refines the spirit and strips too much character.

Pot stills (copper alembic stills) are the traditional choice and are used by the most respected small-production distilleries. Pot stills operate in batches, retaining more of the heavier congeners and flavor compounds that give tequila its complexity and body. The first distillation, called the ordinario run, brings the fermented liquid to roughly 20% ABV. The second distillation, the rectificación, concentrates the alcohol further to around 55-65% ABV.

Column stills operate continuously and produce a lighter, cleaner result at higher ABV. They are more efficient at scale, which makes them the choice for larger producers. Some facilities use a combination of pot and column stills to balance efficiency with character.

In both methods, the distiller makes deliberate cuts: the heads (the early fraction of the distillation run, high in volatile compounds) are discarded. The hearts — the clean, flavorful center of the run — are kept. The tails (the later fraction) may be partly kept for their contribution to body, or discarded. The distiller's judgment in making these cuts is one of the key skills that separates great producers from adequate ones.

Step 7: Aging (or Not)

After distillation, the producer decides what happens next. The legal categories are defined by how long the spirit rests in oak.

Blanco (Plata / Silver)

Bottled immediately after distillation or rested in stainless steel for up to 60 days. Shows the purest expression of the agave and the distillery's production character.

Reposado

Rested in oak barrels for 2-12 months. Develops light vanilla and spice notes from the wood, softens the agave's natural sharpness, gains a gentle amber color.

Añejo

Aged 1-3 years in barrels no larger than 600 liters. More oak integration, deeper vanilla, dried fruit, and spice notes. Still shows agave character in quality expressions.

Extra Añejo

Aged 3 or more years. Approaches the territory of whiskey or brandy in oak influence, with rich, complex flavors at the cost of some agave character.

Cristalino

An aged tequila (typically reposado or añejo) that has been filtered clear using activated charcoal, removing the barrel color while attempting to preserve the flavor.

Barrel selection matters. Ex-American whiskey barrels (used bourbon barrels) are the most common choice and contribute vanilla and gentle wood character. French oak barrels add spice and a different tannin profile. Some producers use wine barrels for a fruity twist. New oak gives a more aggressive wood character that can overwhelm agave if not managed carefully.

Step 8: Dilution and Bottling

High-strength distillate coming off the still is diluted with water to reach bottling strength. The legal minimum is 35% ABV, though most quality tequila is bottled at 38-46%. Some producers bottle at higher natural strength. The water used for dilution is a quality variable that serious producers take seriously — many use proprietary spring or well water from the property, and a handful (notably G4's Felipe Camarena) have developed specific water-sourcing philosophies as part of their house style.

Mexican tequila regulations permit the addition of certain substances — glycerin, oak extract, caramel color, and vanilla — in small quantities without required disclosure on the label. These additives are used to smooth texture, adjust sweetness, add color, or compensate for flavors that an efficient production process may not have developed naturally. This is why many enthusiasts specifically seek out producers who publicly confirm they add nothing.
